I used to love frozen chicken pot pies.  The little ones in the tin cups that you cook in the oven for 45 minutes.  They are no good for you and full of calories, which I did not realize when I was eating them because I did not care about calories.  I ate them a lot as a child and during my college years, but really have not had chicken pot pie in years.

 

Recently I came upon a recipe for a “lighter” chicken pot pie.  The recipe looked so easy I figured I would give it a try and see what happened.  I have been having a lot of success lately with new recipes and really felt like I was on a roll.

 

From start to finish I can have delicious chicken pot pie in about an hour and with the use of my food processor the prep work for the recipe is super easy.  I’m going to post recipe below, but I changed a few things to fit what my husband and I like.

Lesson #1

If things are going horribly wrong in your pan on the stove, screaming nooooo! does not help.

I’m always trying to improve my diet and eating habits in an effort to get to a healthy weight and maintain it. I have had my ups and downs and I’ll try most things. While I enjoy eating a raw diet it does not necessarily work for my husband fulltime and I found that I liked cooked foods too much to give them up completely forever. So, I’ve switched to high raw and now a focus on “clean eating.”

I’ve been checking out some youtube channels focused on clean eating and found some great recipes. I tried a healthy version of taco salad last week and it was a big hit with my husband. I never would have thought on my own to add black olives to my taco salad, but after trying it I don’t think I’ll do without it. It gives such a nice unexpected flavor.

Islamic Radio

Sadly, Knowing True Islaam at Blog Talk Radio is on permanent hiatus but I’ve found another Islamic radio station online recently that I’d like to share. WKTL Radio has programming already online and inshaAllah, they will be posting more. They have a variety of programs and what I listened to so far sounds really interesting. My husband and I did some grocery shopping yesterday and walked through the natural/organic section of the grocery store and I stopped in front of the peanut butter and jelly/preserve section. I had originally intended to get some organic, natural, and probably salt-free peanut butter. I had a taste for peanut butter but did not want to have all the salt and sugar you find in the national brands. While standing in front of the natural/organic peanut butter my eyes looked over and noticed the almond butter. I’ve seen almond butter everytime I shop for peanut butter and just never really stopped to pay much attention.

We have spent almost 4 months here in Alexandria and the realty of what we have experienced has not met with expectations. Even though I reminded myself to keep my expectations within reason, and I thought I had, the reality of the situation here just did not match up. There are many reasons for that and I believe that the political and economic situation has contributed to a great degree. We have diligently looked for an apartment for 3 months and have been unsuccessful. We had certain criteria that needed to be met in finding a longterm living situation, and because we are living off of savings and did not want to work we had to make sure we did not get ourselves into a bad situation that would lead to us loosing money.

It is important when on a budget to try to make the best decisions possible financially. We made istikkaarah and dua and really looked for a good situation. Al hamdulillah, we are not displeased with our situation. We learned a lot being here in Alexandria. It was a good experience for us to have. Not many people get to live in a different country at all, so 3 months being somewhere different and new was good. It will prepare me for the next time, inshaAllah. I will be more confident should we decide to come back to Egypt and better able to cope. I won’t have to deal with the shock of being somewhere so different from home.

So, we are preparing to return back home to the US. Not with heavy hearts but with more information and a better understanding. Whatever happens next I’m looking forward to unpacking and hanging my clothes up somewhere!
